把面粉倒在碗里，然后加入适量的白糖和奶粉一起搅拌均匀，再加入酵母水，有很多人在这个步骤做错了，可能是直接把酵母粉加进面粉里面，其实这种做法是不正确的。
应该是把酵母粉倒在温水里面，加入适量的白糖，搅拌至融化以后，再倒进面粉里面。注意一定要一边倒酵母水一边搅拌，搅拌成絮状，然后揉成面团。
想要馒头松软又好吃，醒面，也就是让面团二次发酵是非常重要的。我们拿出一个茏布，在热水中打湿，注意不要烫住手，然后盖在面团上，等其自动发酵。等到面团体积明显增大许多之后，其实可以拿出面团，进行二次揉捏
面团发好后，想要馒头好吃又软腾腾的，揉面的时候就要在里面加入适量白糖和食用碱，把面揉好后要醒5分钟，然后揉成馒头就可以了。
用擀面杖将将面团压平后，沿着边缘卷起，使其形成一个圆柱形，并搓揉令表面光滑。然后用刀把面团，切成自己所要的宽度，这样一个长方形的馒头就有了雏形了。
下面我们说一下馒头做好后应该是冷水下锅蒸，因为冷水下锅蒸馒头，可以让馒头在慢慢的受热过程中再次发酵，这样蒸的馒头更好吃，如果是热水下锅蒸馒头，那馒头可能会因为突然的遇热而变得夹生或者是蒸出的馒头会发硬。
热水下锅蒸过几次馒头，也能蒸熟，就是蒸出的馒头比较硬，不软乎乎的，如果想要口感软乎乎的馒头，还是要冷水下锅比较好。一般拳头大小的馒头冷水上锅，水开后22分钟就熟了。
